Moudardara – lentils, rice and fried onions
This is a very complete, vegetarian salad which is very tasty and super simple.
It's a historical dish and lentils in some form or another have always existed in our part of the Middle East.Rice and cooked green lentils along with fried onions and seven spices make this simply delicious dish.

Ingredients

200 g lentils (lentilles du Puy type)

80 g of rice (the arborio type plain round , not long grain, or basmati )

2 medium-sized onions

20 cl of olive oil

Salt to taste
Method
Rinse the lentils and rice separately; chop the onions into half round slices.
Boil the lentils in about 4 times their volume with NO SALT for 20 minutes , until they start to feel tender .
Then add the rice and salt to the lentils , cooking on a low flame and keep cooking until the rice is done.
In a separate pan, heat the oil and brown the onion slices. Once browned, place the onions on kitchen paper to get rid of excess oil but pour the rest of the oil onto the rice and lentils and continue cooking until all the water has evaporated.
Place the lentils and rice in a dish, sprinkle the onions on top and serve with a tomato salad …
